Baked Grits

  • 2 cups dry grits* (cooked by package directions)
  • 1 stick butter
  • 3 eggs, beaten
  • 2 cups cheddar cheese, grated
  • 1/2 cup salsa
  • 2 Tbsp. onion, finely chopped (optional)

Melt butter in hot grits. Add all other ingredients and pour into a lightly buttered casserole dish. Bake 25-30 minutes in a 350-degree oven.
