Twice-baked potato casserole

  • 7 medium potatoes
  • 1/2 lb. bacon
  • 3 T. butter
  • 1 c. grated cheddar cheese
  • c. sour cream
  • 1/2 c. onion, chopped
a square

Boil potatoes until cooked. While potatoes are boiling, fry bacon. Chop bacon. Drain potatoes and place in large mixing bowl. Add bacon, butter, cheese, sour cream and onion. Whip with electric mixer. Pour whipped potato mixture into a 1 1/2 quart casserole dish. Cover and bake at 350 degrees for 35 to 40 minutes.
