Summer Baked Potato Salad

  • 8 medium potatoes
  • 1 cup mayonnaise
  • 1/2 lb. chopped bacon (raw)
  • 1 lb. Velveeta cheese
  • 1/2 cup chopped onions
  • 1/2 cup green olives, sliced

Peel, dice and boil potatoes. Dice cheese. Mix potatoes, cheese, mayonnaise and onions - salt and pepper to taste. Pour into greased casserole dish and top with onions, green olives and bacon. Bake uncovered at 325° for one hour.
