Quick Cherry Crisp

  • One 21 oz. can cherry pie filling
  • One teaspoon almond extract
  • 1/4 cup rolled oats, uncooked
  • 1/8 cup toasted coconut
  • Two Tbsp. All-purpose flour
  • 2 1/2 Tbsp. brown sugar
  • Two Tbsp. Butter or margarine, softened
  • 1/2 tsp. ground cinnamon

Pour cherry pie filling into a round eight-inch microwave-safe dish. Sprinkle with almond extract. Spread mixture evenly in dish. In a small bowl, combine oats, coconut, flour, brown sugar and cinnamon. Mix well. Cut in butter with a fork until mixture is crumbly. Sprinkle oat mixture over cherry filling. Microwave, uncovered, on high power for 4-5 minutes. Rotate dish twice or until filling is hot and bubbly.
