White Chocolate Macadamia Cookies

  • 1/2 c. butter or margarine, softened
  • 1/2 c. firmly packed light brown sugar
  • 1 egg
  • 3-1/2 oz. jar macadamia nuts chopped
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 5 (1-5/16 oz.) white chocolate candy bars with almonds, coarsely chopped
  • 1 tsp. vanilla extract
  • 1 c. plus 2 T. all-purpose flour
  • Powdered sugar, optional

Cream butter, gradually add sugar, beating at medium speed of an electric mixer until blended. Add egg and vanilla, mixing well. Combine flour, soda and salt. Add flour mixture to creamed mixture; stirring until blended. Stir in candy and nuts. Chill. Shape dough into 1" balls. Place 2" apart on ungreased cookie sheets. Bake at 350 degrees for 8-10 minutes or until lightly browned. Cool on wire racks. Sprinkle with powdered sugar if desired. Yield: 4 dozen.
