Elegant Rice

  • 1 stick of butter or margarine
  • 1 bell pepper (sliced)
  • 1 c. converted rice (uncooked)
  • Salt and pepper to taste
  • 1 onion (diced)
  • 1 small can of mushrooms (drained)
  • 1 can chicken broth (diluted to make 2 1/2 c. liquid)

Melt butter in pan. Sauté onion, bell pepper and mushrooms. Add rice and continue to sauté until rice is golden brown. Pour mixture into casserole dish and add liquid, salt and pepper. Cook uncovered for 45 minutes at 350 degrees.
