Orange Grecian Cake

  • 1 box yellow cake mix
  • 3/4 c. vegetable oil
  • 1 box instant lemon pudding mix
  • 3/4 c. water
  • 4 eggs
  • 2 T. butter
  • 1/2 c. frozen orange
    juice concentrate
  • 2 c. confectioners sugar
  • 2 T. orange juice
    Blend over medium heat until smooth.

Mix all cake ingredients well and bake in a greased and floured tube pan at 325 degrees for 45 minutes to 1 hour. Remove from oven and immediately punch holes in cake with a straw. Make glaze, reserving 1/3 cup. Pour glaze over cake, allowing it to drizzle into the hot cake. Let cool in pan, preferably overnight. Turn cake over onto plate and drizzle the remaining glaze over top.
