Jalapeno Potato Casserole

  • 4 or 5 Irish potatoes
  • 1 T. flour
  • 1 bell pepper (cut into small pieces)
  • 1 cup milk
  • 1 small onion (chopped)
  • 1 small jar pimento (including the juice)
  • 1/2 roll jalapeno cheese, cubed
  • 1/2 stick butter, melted
  • Salt and pepper to taste

Boil potatoes in skins. Slice into 1/2" pieces. Layer in buttered casserole dish. Mix pepper, onion, pimento, melted butter and flour. Stir until well blended. Gradually add milk, then add cubed cheeses. Pour mixture over potatoes. Bake at 350 degrees for 45 minutes.
