Oscar's Vidalia Onion Casserole

  • 3 cups coarsely chopped Vidalia onion
  • ½ stick margarine
  • 3 eggs, beaten
  • ½ cup saltine cracker crumbs
  • ¾ cup milk
  • ½ cup cheddar cheese, shredded
  • Salt and pepper to taste

Sauté onion in margarine. Mix onion and all other ingredients, except cheese. Pour into baking dish and top with cheese. Bake at 350° for 25-30 minutes.
