Pear Bread

  • 3 cups all-purpose flour
  • 3/4 cup vegetable oil
  • 1 tsp. baking soda
  • 3 eggs, slightly beaten
  • 1/4 tsp. baking powder
  • 2 cups sugar
  • 1 tsp. Salt
  • 2 cups peeled and grated pears
  • 1 Tbsp. ground cinnamon
  • 2 tsp. Vanilla extract
  • 1 cup chopped Pecans

Combine the first six ingredients in a large bowl. Make a well in the center of the mixture. Combine oil, eggs, sugar, pears and vanilla. Add to dry ingredients, stirring just until moistened. Spoon mixture into two greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pans. Bake at 325 degrees for one hour and five minutes, or until bread tests done. Cool 10 minutes before removing from pans.
