Pumpkin Bars

  • 1 box yellow cake mix (reserve 1/2 cup)
  • 1/4 cup vegetable oil
  • 4 eggs
  • 14 oz. can Eagle Brand Sweetened Condensed Milk
  • 16 oz. can solid pack pumpkin
  • 1 tsp. almond extract
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 cup chopped nuts (optional)

Preheat oven to 350 degrees. Mix cake mix, oil, 1 egg and 1/2 cup nuts for crust. Press into a greased 13 x 9-inch pan. Mix pumpkin, condensed milk, almond, cinnamon, salt, eggs and 1/2 cup reserved cake mix. Mix well and pour over crust. Bake 40 to 50 minutes.
