Chicken and Spinach Quesadilla

  • 2 flour tortillas - burrito size
  • 1 boneless, skinless chicken breast - cooked and shredded
  • 1 Tbsp. olive oil
  • 1 cup mixed Mexican shredded cheese, divided
  • ½ cup chopped frozen spinach, thawed and drained

In large non-stick skillet with heat on medium to medium-high, add: oil, 1 tortilla, ½ cup cheese, chicken, spinach, and remaining cheese. Place the second tortilla on top. With a wide spatula, lift and flip. Some ingredients may come out when you flip; stuff them back in. When tortilla has browned, place on a plate and cut into triangles with pizza cutter.
