  • 12 oz. red snapper fillets
  • 1 tsp. chopped chives
  • 2 tsp. mayonnaise
  • 1 tsp. chopped parsley
  • 1 tsp. Dijon mustard
  • 2 tsp. Parmesan cheese
  • 1 tsp. lemon juice

Spray a shallow, flameproof baking dish with nonstick cooking spray and arrange fillets indish. Combine mayonnaise, mustard, lemon juice, chives and parsley in small bowl. Mix well. Spread over fillets. Sprinkle with cheese. Bake at 400 degrees for 20 minutes. Broil for 1 minute. Yield:2 servings.
