Southwest Chicken Casserole

  • 1 cup rice
  • 1 tsp. chili powder
  • 2 cup chicken stock
  • 1 can of cream of chicken soup
  • 1 cup cooked chicken, cut into strips
  • 1 cup sour cream
  • 1 medium onion, chopped
  • 16 oz. shredded cheddar cheese
  • 10 oz. can Ro-tel tomatoes and green chilies

Cook rice in chicken broth. Pour into a 13" x 9" casserole dish. Mix all other ingredients except Ro-tel tomatoes. Pour this mixture over the rice. Top with Ro-tel tomatoes. Bake at 350 degrees for 45 minutes. Serves 6.
