Heart-healthy Spa Chicken

  • 1 can drained black beans
  • 4 boneless skinless chicken breasts
  • 2 cups Salsa (hot, med or mild)
  • Salt and pepper to taste

Spray casserole dish with nonstick spray. Line bottom of the dish with black beans. Place chicken breasts on top. Cover with salsa. Cover with foil and bake for 45 minutes at 375 degrees in oven. Uncover and bake additional 10 minutes. Serve with rice. Serves 4.
