Turkey Almond Bake
This recipe comes from Powerful Good Cooking, a cookbook compiled by Alabama Power's retired employees.

  • 1 cup minced onion
  • 1 cup chopped bell pepper
  • 1 cup celery
  • 1/2 cup butter
  • 3 cups diced turkey
  • 4 oz. can mushrooms
  • 3 cans cream of chicken soup
  • 1 large can chow mein noodles
  • 3 oz. package slivered almonds

Lightly sauté onions, bell pepper and celery in butter. Combine turkey with drained mushrooms and soup. Add sautéed ingredients and mix well. Line casserole dish with chow mein noodles and pour mixture in dish. Top with additional noodles and almonds. Bake at 350 degrees for 40 minutes.
