Power Recipe. Apple Raisin Muffins.

Need a quick and delicious treat for Spring Break? Power your breakfast or snack time with these tasty Apple Raisin muffins!


3 cups all-purpose flour 
1 teaspoon salt
1 teaspoon soda
½ teaspoon baking powder
2 teaspoons cinnamon
3 eggs
1 cup olive oil
1½ cups brown sugar
3 teaspoons vanilla
2 to 2½ cups chopped apples
1 cup raisins
1 cup chopped walnuts

Chop walnuts and apples. Measure raisins. Set all aside. Sift together flour, salt, soda and baking powder. Set aside. Combine eggs, olive oil, brown sugar and vanilla. Mix well. Add apples. Mix well. Add flour mixture and mix. Then add raisins and nuts. Mix well. Divide mixture into muffin pans. Bake at 325-350 degrees for about 20 minutes or until a toothpick inserted in the center comes out clean.

Makes about 24 muffins. (Freezes well when wrapped individually and makes a good breakfast food when heated and buttered in the middle.)
