Serves: 4

Ingredients

  • 6 cups vegetable or beef broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (32 ounce) bag frozen mixed vegetables
  • 1 large potato diced
  • 1 teaspoon Italian seasoning
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Optional: ½ teaspoon Cajun seasoning

Instructions

  • Combine all ingredients in a pot, simmer for about 15-20 minutes on medium to low heat or until potatoes are tender.
  • Season with salt and pepper to taste.
  • Serve warm and enjoy.
