Recipe: Jalapeño Chopped Sandwich with Arugula & Blue Cheese Dill Mayo

In the world of sandwiches, one creation has taken social media by storm: the chopped sandwich. Packed with layers of delicious ingredients, this sandwich is truly a feast for the senses.

Most chopped sandwiches include iceberg or romaine lettuce, but I decided to switch things up a little bit and use arugula instead. Arugula is the star of this sandwich for several reasons. Not only does it add a peppery, slightly bitter flavor that complements the other ingredients perfectly, but it also packs a nutritional punch. Arugula is rich in vitamins A, C and K, as well as folate, calcium and potassium. It’s a nutrient-dense choice that elevates the taste and health benefits of your sandwich.

Serves: 4

Ingredients

  • 2 cups arugula
  • 1 large tomato, sliced
  • ½ small red onion, sliced
  • 4 slices Swiss cheese
  • 6 slices deli-style turkey
  • 5 slices salami
  • ¼ cup sliced jalapeño peppers
  • 2 teaspoons olive oil

For the Blue Cheese Dill Mayonnaise:

  • ¼ cup light mayonnaise
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon Cajun seasoning
  • 2 tablespoons blue cheese crumbles

Instructions

  • In a small bowl, combine mayonnaise, dill, Cajun seasoning and blue cheese. Set aside.
  • To a clean cutting board, add the arugula, sliced tomatoes, red onions, Swiss cheese, turkey, salami, 2 tablespoons of the Dill Blue Cheese Mayonnaise, jalapeños and olive oil.
  • With a big, sharp knife, chop everything as small as possible.
  • Spoon the mixture inside hoagie buns, sub rolls, sliced bread or any other bread you would like to use.
