Serves: 4-6
Ingredients
- 1 pound fully cooked smoked sausage sliced
- 4 Russet potatoes cut and quartered into small pieces
- 1 large red pepper cut into strips
- 1 large green pepper cut into strips
- 1 large onion sliced
- 3 tablespoons oil
- 2 teaspoons Italian seasoning
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- Salt & pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Line a large sheet pan with aluminum foil or spray it with nonstick cooking spray.
- Spread the sausage, potatoes, bell peppers and onions onto the baking sheet.
- Drizzle the oil and sprinkle the seasonings over the sausage and vegetables and toss to combine.
- Spread in an even layer, and bake in the oven for 30-35 minutes, or until the potatoes are tender and slightly crispy, stirring the ingredients once or twice during cooking time.
- Serve warm and enjoy.
