Serves: 4-6

Ingredients

  • 1 pound fully cooked smoked sausage sliced
  • 4 Russet potatoes cut and quartered into small pieces
  • 1 large red pepper cut into strips
  • 1 large green pepper cut into strips
  • 1 large onion sliced
  • 3 tablespoons oil
  • 2 teaspoons Italian seasoning
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • Salt & pepper to taste

Instructions

  • Preheat oven to 425 degrees.
  • Line a large sheet pan with aluminum foil or spray it with nonstick cooking spray.
  • Spread the sausage, potatoes, bell peppers and onions onto the baking sheet.
  • Drizzle the oil and sprinkle the seasonings over the sausage and vegetables and toss to combine.
  • Spread in an even layer, and bake in the oven for 30-35 minutes, or until the potatoes are tender and slightly crispy, stirring the ingredients once or twice during cooking time.
  • Serve warm and enjoy.
