This power recipe packs a punch. Cool, creamy, crisp. It’s the perfect treat to whip up this weekend!

3 eggs, separated
1/3 cup bottled key lime juice
1 whole egg
1 lower-fat graham crust pie shell
1 (15 ounce) can fat-free sweetened, condensed milk
3 tablespoons sugar
½ teaspoon cream of tartar


  1. Preheat oven to 325 degrees. Bake pie shell for 3 minutes; set aside and leave oven on.
  2. In stand mixer, beat 3 egg yolks and 1 whole egg until thick. Add condensed milk and beat well. Mix in lime juice. Pour into prepared pie shell.
  3. In a clean mixing bowl, beat 3 egg whites, sugar and cream of tartar at high speed until stiff peaks form. Spread on top of pie.
  4. Bake for 25 minutes. Let cool.
